While I was at work I was contemplating what we should have for dinner. I thought about something that I hadn't had in ages and decided to see if I could find a quick recipe for it. On my mind was Paella. Ordinarily it is chock full of sea food and takes a bit of time, both of which I don't like. I searched out a simple chicken paella and made it my mission to make it mine.
I found a decent recipe and made some adjustments and I'll post my recipe. This recipe serves 2 but can be doubled or tripled easily.
Recipe:
2 chicken boneless chicken thighs cut in chunks
1/2 cup Chorizo sausage (fresh or cured)
1/3 cup onion
1/3 cup red bell pepper
1 Tbls olive oil
1/2 cup arborio rice (the kind you use to make risotto)
1/2 tsp each of tumeric, minced garlic, and cumin
a dash of salt
1 1/8 cup chicken broth
3/4 cup frozen pea thawed.
Directions:
Brown chicken and chorizo with half of the olive oil. Add onion and red bell pepper and cook until they loose a bit of the raw crunch. Remove from the pan and set aside. Place the rest of the oil in the pan along with the rice. stir the rice to cover with the oil and toast slightly. Add meat and veg back into the pan and add the spices. Add chicken broth and bring to a boil. Cover and reduce the heat and simmer until the rice is cooked. Between 20 and 30 minutes depending on your rice and your cooking heat. One rice is cooked add in thawed peas and cook just until the peas are heated through.
Enjoy like we did with a great side salad of organic greens, sunflower shoots, mushrooms, bell pepper and onion.
